Lemongrass Marinade:

This marinade is incredibly tasty and can be used on just about any protein. I have used it on tofu, shrimp and pork, just to name a few.   


3 lemongrass stalks
6 cloves garlic
1 inch ginger
1 jalapeno (seeded) 
2 tablespoon dark soy sauce
2 tablespoon light soy sauce
2 teaspoon fish sauce
1 tablespoon plum sauce


In a food processor chop lemongrass, garlic, ginger and jalapeno. Move paste to a bowl and mix in remaining ingredients. Allow protein to marinate for at least three hours, overnight is always better. Make sure to remove as much marinade from protein before cooking -- lemongrass gives great flavor but it has a hairy consistency which is not the most fun to eat.

NOTE: This recipe is not vegetarian; if you wish to make it vegetarian simply omit the fish sauce. Also, if plum sauce is hard to find then, sugar is a good substitute.
