Dumplings are one of my favorite things to make on a rainy day when I have lots of time. They take a while, but can be frozen and saved for quick meals during the week. I usually steam one third of the dumplings I make and freeze the rest to throw into stir fries with vegetables and soy sauce. 

This dumpling recipe can be made vegetarian or vegan by replacing the 1 pound ground beef or pork for 1 pound firm tofu.
